For Rachel et al .... source:  Pampered Chef
Of course, I use my Pampered Chef stoneware pan but any will do. This one measures about 3.5" x 7.5" on the bottom, 5" x 9" on the top (sides angle) and is ~2.75" deep. 

Usually you don't want to fill your pan more than 2/3 full ... so if you have more batter than that ... don't overfill!  You'll have a mess ....  instead put the extra into muffin cups

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup mashed ripe banana (about 2 medium)
1/3 cup milk
1/4 cup vegetable oil
1 egg
1/2 cup chopped nuts (optional)

Preheat oven to 350o F.

Spray bottom only of loaf pan with nonstick cooking spray. 

Combine flour, sugar, baking powder, and salt in large bowl.

Add remaining ingredients; stir just until dry ingredients are moistened.

Pour batter into prepared pan.  Bake 60 minutes or until toothpick inserted in center comes out clean.

Remove from oven to cooling rack.  Cool in pan 10 minutes.

Loosen sides of loaf from pan; remove from pan.  Cool completely.

Option:  Miniature chocolate morsels may be substituted for chopped nuts.  [I always use walnuts]
