This is for Rachel who wanted something "different" for summer.  I got this recipe over 30 yrs ago from my then-to-be MIL ... she got it from a magazine.  I used to take this to my youngest son's end-of-season baseball cookout and one father looked forward to it every year.  After the first year, when it came picnic time he'd always ask "are you bringing that corn salad again?"

Since it is now corn season this is the best time to make it.  When using fresh corn, I use raw corn (I know, I didn't think I'd like it either)--no boiling or blanching.

1 1/2 cups whole kernel corn, fresh or frozen
1/2 cup green pepper -- chopped
2 Tbs pimiento -- chopped
1/2 cup onion -- chopped
1/2 cup celery -- chopped

1/2 tsp salt
1/4 tsp pepper
3/4 tsp dry mustard
3 Tbs vinegar
1/4 cup salad oil   

Combine all ingredients and let stand for several hours before serving.  This is a fresh relish so keep refrigerated.
Serves 6

Cooking Tips
Best made with fresh sweet corn in the summer -- white, yellow, or mixed.  It doesn't matter as long as the kernels are plump and sweet.

Im a big corn fan.  I will have to try it out for my next weekend out.
