Author Topic: Enchilada recipe from Fall Conference 2009  (Read 783 times)

I promised I would post this easy to fix and quick to serve meal.

This will serve four-five people, but can easily be doubled for larger groups.

Brown 1 1/2 pounds of lean hamburger and add 1 1/2 packages of taco seasoning. (I used Ortega taco seasoning)  Add a chopped seeded jalapeno if you like it spicier. This can be done a day or two ahead

lightly grease a square baking pan then layer in the following order:

1) 4 Yellow corn tortillas (do not use flour tortillas or white corn tortillas, they will turn to paste)
2) 1/2  meat mixture
3) 1/2  package of chopped, cooked spinach
4) 1/3 of 16 0z shredded cheddar cheese.
 
Repeat this order again.

Then reserve about 1/2 cup of a 19 0z can of enchilada sauce,(I used old El Paso) and pour the rest of the can over the layers.

Finish with a last layer of tortillas, pour the 1/2 cup of sauce  over and top with the last third of the cheese.(extra cheese will make it even better!)

Cook in a 400 degree oven for about 30 to 40 minutes or until the center is warmed through and all the cheese on top is melted and browned.

Serve with sour cream

This recipe can have  black beans, corn or roasted peppers added as a layer if the pan is deeper.

I was shopping today for the ingredients -- did you mean a 28 oz can of enchilada sauce?  that's what I bought since I didn't want to not have enough!

No, I meant 19 oz.  But that of course can be adjusted to personal taste.  I forgot that I had added a layer of chopped spinach in the one that I made in Chicago.  It made a good one dish meal that way.

And that dish plus a couple of others are what makes the conference fun in addition to sewing, old friends and new friends.  It was so good after a long day.  Linda

I am so glad he liked it!!  I have to admit that I do not make it this way at home, because of my problems with chemicals.  I have to use organic  cans of sauce and use taco seasonings without msg.  But I wasn't able to get out and get those things in time for the conference.
